Maddie & Rich’s Brunch Wedding: A Corn Beef Hash Love Story!

In November of 2015, Maddie and Rich ran into each other at a group brunch. She  wanted to order corn beef hash. He said, “you like corn beef hash? “She said yes, and he said, so do I. She said I think we’re meant to be!”

Because of this chance brunch encounter, these two are now planning their brunch wedding. Spoiler alert! Their afternoon brunch wedding already happened, and you can see it here later today. So, stay tuned.

Their Love Story

Where Did you Meet?

We met through mutual friends at Rich’s college roommates bar. We hit it off but didn’t think much of it. In November of 2015, we ended up having brunch together with a group of friends, and I wanted to order corn beef hash. He said, “you like corn beef hash?” I said yes, and he said, so do I. I said… I think we’re meant to be! And the rest is history .

How did he ask you to marry him?

Rich proposed to me in Okoboji. Okoboji (is a city in Dickinson County, Iowa, United States, along the eastern shore of West Okoboji Lake in the Iowa Great Lakes region). Our friends own a house there and we visit for the entire summer. 

Describe both of your personalities:

We are very similar… laid back, easy going

What do you two like to do together?

Everything. Workouts with our trainer. Walks around Aksarben, especially when it’s super nice out at night. We’re both night owls. He’s the best person to travel with and always finds all the best restaurants. We love Vegas and skiing. I love the beach and he loves the mountain.
