So, it’s Monday afternoon, and all I can actually think about right now is wedding cake (hellooo 6th month of pregnancy). But not any wedding cake: no ruffles, no naked or seminakedness, no steampunk dripped delights, instead I’m thinking about a gorgeous new trend that we can see dominating the rest of the summer season, looking rich and moody in the fall, and then blooming once again in the spring. You see, florals have always been a HUGE part of wedding cake design, be it fresh, cascading blooms from top to bottom, buttercream, gum paste, or sugar flowers beautifully worked into an artful overall aesthetic, or brilliant watercolor florals hand painted onto delicate frosting or fondant. This year, though, cake artists are bringing the farm-to-table trend into the pastry arena - with edible and pressed flower designs that are 🙌🙌🙌.

I was just scrolling through my Insta feed this afternoon and was starstruck by a creation from flower-pressed phenom Loria Stern. OMG this lady chef is beyond, and we’re sooo happy to know she exists, because TBH, the edible/pressed flower wedding takeover has been happening for a while now in England and Australia; she’s going to make it huge here (based in Santa Barbara, CA).

Of course, we’ve scoured the internet for some of the prettiest interpretations of this trend, and we’ll get to that in a sec. But first, here’s why we’re particularly obsessed with how these cakes look (aside from the fact that pressed flowers have such a love story sensibility about them already and that’s what we need for a wedding, right?):

As one cake artist (@scootabaker) mentioned, using flowers on her cakes is legit like using nature’s sprinkles. And we’re so behind that notion, because we could take rainbow sprinkles on anythinggg. Bold-colored flowers are an even better choice.

They add such a great textural component to a dynamic cake design. The artists who have mastered this trend do incredible things by layering painted, fresh-pressed, and buttercream-pressed flowers.

If your wedding will have a garden party vibe or you’re planning to exchange vows at a botanical venue, having a cake like this will be ultra appropriate. It feels natural, boho, and even while feminine with florals, it’s not overwhelming.

We’re also so amped up about the trend because it allows vendors - pastry chefs, florists, and etc. - to collaborate even more together.
